I got quite a good deal on cauliflower, the other day. $1.68 a head. I eat a fair amount of cauliflower, because it is one of the lower carb veggies, and I am on a low carb diet. There are times when I got to the grocery store and there isn't any cauliflower or it is small and not worth the price.

It is very easy to get ready for the freezer. You blanch it for 3 minutes in boiling water and then plunge it into a cold water bath to stop the cooking process. Then you bag it in some good freezer bags. I use a straw to get as much air as I can out of the bag.

I am going to make cauliflower soup tomorrow, I too like cauliflower.
